Rempeyek is so crunchy and tasty for snacks or to accompany your entree, e.g : Nasi Pecel (steamed rice served with cooked mix vegetables and peanut sauce). No doubt, it´s gone in a few minutes.Ingredients:

400 g rice flour
100 g tapioca flour
peanuts, as required
4 kencur (kaemferia galanga), crushed
8 cloves garlic, crushed
4 candlenuts, crushed
1 tablespoon ground coriander
1 tablespoon salt
1 egg
1 can (400 ml) cocounut milk
900 ml water
5 lime leaves, finely sliced
cooking oil for frying
directions: combine all ingredients in a bowl and stir thoroughly. Heat the oil and fry the mixture over medium heat until golden brown on both sides. Drain on paper towel.
