Indonesian style: Shredded Rujak/Rujak Serut

Many variations of typical Indonesian fruit rujak, for example: Rujak Cingur, Rujak Pengantin, Rujak Juhi, Rujak Bebek/tumbuk etc. Read more about Indonesian Fruit Rujak here.

Ingredients:
1/2 pineapple, cut into matchsticks
2 carrots, 3 apples, 2 pears, 1 mango -> shredded

for Rujak dressing:
250 ml water
2 bird´s eye chillies, grinded
250 g Gula Jawa/coconut sugar
1 tbsp tamarind paste
1/2 tsp shrimp paste ( optional)
juice of two limes
4 tbsp roughly ground fried peanut
pinch of salt

directions: boil water with gula jawa and tamarind paste. Remove from heat then sift. Let it cool. Add chillies, salt, lime juice. Pour mixture into shredded fruit. Keep in refrigerator before serving.

Fruit Rujak with Lime Juice

I usually make rujak with gula jawa/coconut sugar. Today, I´m craving something fresh, spicy and sour but too lazy to make Sambal rujak. So, I made this fruit rujak with lime juice inspired by Teh Niknik. Danke!

Ingredients:

Juice of 3 limes

12 tablespoons sugar

300 ml water

1-2 Red chillies/bird´s eye chillies, deseeded

salt


Fruits: a half of pineaple, 1 apple, 1 pear, 1 mango --> cut fruit into long thin pieces


directions: combine water and sugar in medium saucepan. Stir over heat, until sugar dissolves. Let them cool. Pour in lime juice in syrup. Add chillies and fruits.

Rujak Pengantin/Wedding Salad

I don´t know why it´s called Rujak Pengantin/Wedding Salad. Anybody has a clue?

Ingredients:
Salad/lettuce, carrots, cabbage, boiled eggs, boiled potato, emping crackers, fried tofu

Peanut sauce to grind:
250 g fried peanut or peanut butter
2 tablespoons ebi/dried shrimps, soak in hot water then fry without oil
vinegar ( substituted with juice of 2 lemons)
2 bird´s eye chillies
75 g palm sugar
300 ml water
salt

Rujak (tanpa) Cingur


Baru kali ini bikin rujak (tanpa) cingur sendiri, biasanya tinggal nyicipin bikinan temen-temen di Hamburg yg asli Jatim. Kebetulan dapet petis dari jeng Inul. Pertamakali nyoba waktu ke Surabaya bingung juga, kayak pecel tapi ada buahnya..kuahnya agak hitam, tapi rasanya ternyata enak juga. Karena nggak ada yg jualan cingurnya biasanya diganti sama kikil, berhubung yg di rumah nggak mau kikil jadi ya tanpa cingur dan kikil.

Bahan: Tauge, Kangkung, mentimun , tahu/tempe goreng, belimbing, nanas, mangga (lagi nggak punya persediaan jadi cuman pake belimbing)

Bumbu:
2-3 sdm petis/shrimp paste
4 sdm kacang yg sudah digiling
4 siung Bawang putih goreng
2 sdm gula merah
4 buah cabe keriting
1 sdt terasi/belacan
air asam, garam secukupnya
air secukupnya

Cara: Rebus sayuran, buah di potong-potong, juga tahu dan tempe, siram dengan bumbu yang sudah di ulek/dihaluskan.

Untuk: sekitar 4-5 porsi
